Unique Culinary Adventure
MIL is one of those places where more than captivating your taste buds, it encourages you to understand how all of these elements present in your dining table come together. It's an immersive experience and an innovative concept in which guests are treated to a guided walk through the breathtaking mountains surrounding Maras. Along the way, we were encouraged to sample raw fruits plucked fresh from the trees and herbs, savoring their natural flavors and aromas. The experience of tasting the raw ingredients in their purest form was both enlightening and invigorating, offering a deeper connection to the land and its bounty. Before starting our degustation menu, we were shown how local working women dye organic textiles using natural ingredients. After, we were given 3 cocktails - the one made out of Mullaska was my absolute favorite- . Lastly we proceeded to be seated to start what would be our degustation menu with pairing. I could highlight different moments of the meal, but I do believe its one of those places you have to experience to comprehend. Sometimes the simplest ingredients, tell the best stories.
Unbelievable gastronomic experience
This is a unique, once-in-a-lifetime experience and could be the most unique meal you have in your life. What Virgilio Martinez has created is magnificent. Being in this location, at this altitude, is remarkable in itself, but then you add the multi-sensory immersion of Mil and it reveals a totally unique perspective of Peru. It is a destination in itself, and worth the journey and time (the 8 step tasting menu takes around 2.5 to 3 hours, and you want to allow a full day if you choose the full immersion experience). We were continually astonished and inspired as each beautiful course was presented. The entire place is a work of art. The courses were just large enough to savor, without being too filling, and the beverage pairings accompanied the dishes perfectly. It is nice there is a choice of alcoholic or non-alcoholic beverage pairing options. We thoroughly enjoyed our time at Mil and are so happy we were able to do it. Definitely add this to your Sacred Valley trip planning, but book well in advance, there are limited seatings each day.
The emperor has no clothes..
Virgilio Martinez, the chef behind Mil and Central restaurants in Peru, is spoken of in tones of awe in the foodie world and Central has just been named best restaurant in the world in the vacuous vehicle for PR puff that is the “50 best” list. But perhaps the time has come to question whether the emperor has any clothes. Basing a tasting menu on the products of andean microclimates is a great gimmick but does it really make for a great restaurant. From this experience I would say no. Lunch takes at least a couple of hours and is presented as a series of “moments” - for which read very small plates, mostly to share. While they often looked pretty - lots of flower petals and interesting tableware - most were not remotely memorable and were poorly explained by a rather unhelpful waiter with a very limited grasp of english. Only two stood out, an alpaca stew with several types of quinoa, and a lamb tartare which by itself was delicious but was totally lost when we followed the waiter’s instructions to mix it with an unexceptional leaf salad and two sauces, one of which seemed a little too sweet. A mushroom and duck dish lacked any depth to the duck sauce and came with a small disc seemingly of sawdust. Other dishes, sorry “moments”, were possible interesting from a food anthropology perspective but were bland and stodgy. .The picture cards that accompanied each dish were often more interesting that the taste of the dish itself. These cards could have been a marvelous opportunity to compensate for the limited language skills of some of the staff by providing foreign guests more information on the ingredients and the ecosystem from which they came but instead were filled with incomprehensible prose more purple than the local potatoes. Two options for drink pairings were available. Sadly we opted for the non-alcoholic choice. A couple of fruit juices had distinctive and enjoyable flavours but several were as bland as the food they accompanied. The pairing for a corn dish could well have been the left over cooking water. Luckily we chose a red wine for the alpaca dish and the high altitude red suggested was a perfect match for the rich stew. The dining room is small and light with comfortable chairs and is a pleasant place to dine. However the service is mediocre and in some instances smug - detracting from the “experience”. However many other customers seemed more interested in their cellphones than in the food so perhaps that does not matter. Overall this was an expensive and unsatisfactory “experience”and, by the criteria one normally applies to top-end restaurants - warmth, hospitality, good food and drinks, and a comfortable ambience of guests clearly enjoying themselves - it was a very poor meal. There were none of the “wow” moments that were the highlights of great innovative restaurants like El Bulli, The Fat Duck or Can Roca and none of the technical tour de force displayed by Ducasse, Pic or Keller. A profound disappointment.
Celebration of Andean ingredients
While at Central the menu celebrates all Peruvian products from different ecosystems, at Mil everything revolves around the Andean territory. Speaking of the territory, it must first of all be said that it is very difficult to reach, due to the roads being not at all easy and without signage. The restaurant is located next to the Moray archaeological park and, as I was saying, offers a menu made up of completely Andean products: stone-baked potato bread, lamb tartare with flowers and mountain fruits, alpaca and quinoa, corn in different consistencies. I found the desserts very similar to those eaten at Central. The work of researching local ingredients and the desire to forge a very strong bond with the surrounding nature is appreciable.
Outstanding Lunch Experience
First, a very pleasant drive to reach the restaurant and food research lab at Moray which is located at 3,800m altitude and about 90 minutes from Cusco. The location is in a magnificent spot and a walk around the property before, during, or after the lunch experience is recommended. Not just to appreciate the environment but also to better understand what local produce is being grown on the property. As do most people, we had the 8-course (or "moment") lunch. Ingredients wonderfully fresh and all dishes beautifully presented. The staff were excellent (our server was Sofia who did a wonderful job at explaining each other dishes beforehand. We also chose to have a cocktail or wine pairing with each course which added to the enjoyment of the lunch. We would not hesitate to recommend this experience. For us, a genuine highlight of our holiday in Peru.

Fabulous Lunch

Ok at this point I've attended a reservation purchased on AT by a friend and sold a reservation personally. Both worked pretty smoothly, nothing sketchy about it. A few areas for improvement including a way to more directly communicate between buyers and sellers, but the app always seems to be in development. AT customer support is really(!) responsive and helpful too if you have questions!

It can be under your name or a name you choose! Some reservation offers already include the AppointmentTrader Transfer Service which will transfer the reservation in to your name. If its not included you can add it on after buying the reservation for a small fee. One thing on that though: As many reservations become available at last minute, taking a reservation in someone else name is quick and great for privacy. Most reservations on AT are listed with a virtual phone number, so all you need to do is present the phone number at the hostess stand and you are good to go!

Once the reservation is in your portfolio, you definitely own the timeslot, the review team would not have approved the trade if the reservation wasn't confirmed - so you are going :-) Judging from your post you bid today and are going tomorrow - don't worry as long as you initiated the name transfer, you are good - the transfer service has to work with the opening hours of the reservation team of the respective venue. You will likely see the transfer confirmation a couple hours before your reservation time.
Where do the Reservations on AppointmentTrader come from?
Mostly from people who don't need their reservations or appointments any longer. AT has no relationship with places listed and acts as a platform connecting buyers and sellers making sure that listed reservations are real and that privacy is not compromised when transacting.
What happens if my bid expires unanswered?
Hey @FluffyStar64, thanks for the question! When you place your bid the amount gets transferred in a deposit account, the second you either cancel your bid or a few minutes after the bid expires the funds are moved back into your main account from where you can refund it to your payment method or use for other transactions.
