Uncle has a new system
Instead of cooking each order at the front of the queue, we now have a mass stir fry and plated as far as it goes. Great for queue reduction. And it’s just as good as it was. Welcome to the 21st century.

It was lunch time, I saw the queue, I joined the queue. 15 minutes later I was served the noodles hotter than the glass cubicle uncle hung was frying the noodles in. A lot of work goes into making this plate of noodles. A lot of seafood too. Moist, hot, with a splash of sambal when you want it. It’s good.

Its storefront looked messy but its noodles give a gd punch… however be prepared for the long queue pls!!!! Yummy … i kept going back for it!

A Michelin Bib Gourmand awarded stall (for several years) which I didn’t know.
IMO, the noodles does have a rich “wok-hei” ie the aroma and taste of stir-fried noodles with sliced squid, prawns, mixture of condiments and broth and oil in a cast-iron wok over intense fire that traditionally gives Fried Hokkien Mee its scrumptious oomph.
When I was young, I love buying to takeaway which is traditionally wrapped in Opeh Leaf (Betel Nut Palm). The leaf traps and allows the stir-fried noodles to soak up all the umami retaining the heat. A squeeze of calamansi (lime), and some rich spicy chilli paste and/or sliced red chili peppers will make eating this local favourite an amazing gastronomic experience.
Hong Heng’s noodles were tasty but arguably not as good as Tiong Bahru Yi Sheng Fried Mee. Hokkien (another Michelin awardee).
Wok Hei Hokkien Mee
To Singaporeans, Hokkien Mee is all about Wok Hei, or the Breath of the Wok. Where the big fires heating the cast iron Chinese Wok combines oil and broth at high heat to give the frying noodles a distinctive aroma only Chinese cooking can produce. This Hokkien Mee does that perfectly. Not too dry or watery, good blend if yellow noodles and thick bee hoon, all nicely coated with flavourful and creamy broth with a strong wok hei. Toss in the chilli for added kicks. Menu starts from $4 / $5 / $6. Prices get you more fresh ingredients like pork belly strips, prawns and sotong strips. Though well deserving as Michelin guide hawker, my only gripe is there are no pork lard. Still, this is a forlur star experience just for the wok hei noodles. Recommended and must try.

One of my favourite Tiong Bahru hawker stalls. They do one thing really well and that is Prawn Mee. Prepared in a wok from scratch, plate by plate, you can also pick your size option. There is usually a queue, especially at lunch, but it moves pretty quickly. Despite the Michelin rating thing, the price remains usual for a quality hawker stall. So good.

The noodles were okay, but we felt the taste of prawn could have been stronger. The chilli was really good and helped to enhance the taste of the dish. Prices are reasonable, starting from $4.

We visited Tiong Bahru hawker centre on a Sunday afternoon and each of us ordered our own food as usual. My son queued for Hokkien mee and came back with a $5 plate. Upon collecting his noodles, he realised the stall is on Michelin Guide.
We tried the noodles and it was pretty good. The portion was decent and the noodles tasty. We wanted to buy some back home but the stall actually closed for the rest of the afternoon. Nonetheless, the Hokkien mee is something that you will come back for again.
Worth the queue
Always Long queue stall but lucky we tried it while the queue was short. The noodles was fried with lotsa fragrance due to the broth and lotsa wok hey. Ordered a middle plate and it was really full of ingredients. Worth the Michelin rating and is definitely one of the better Hokkien prawn mee around.

Another hawker restaurant. These are all delicious. The food is wonderful & simple. This is the place locals eat. Inexpensive but very very tasty. Definitely worth one of these.
