The restaurant is very upscale and they boast having some of the finest cuts of meat and accreditations to match. The highlight of the meal and evening certainly was the Japanese Waygu. We did a flight of Chateau Uenae Snow Beef (the rarest imported beef - RPM and only 1 other restaurant are able to accept this meat according to RPM), Kumamoto, and Takamori "Drunken Wagyu" and it certainly was delicious. My wife and I made the mistake of trying the "top" cut first instead of working our way to it but still very well done. After that, the experience unraveled. We ordered the Westholme Strip and the first service was over-salted. The manager came out and tried to make things right by refiring another steak with less, to practically no salt. In the rush to appease us, it was rare than medium rare and it was overly heavy with pepper. Again, the manager comes and we were essentially informed that the chef was following their cooking methods and techniques. At one point we were told that "chef samples all cuts before service to tables". If this is true, the chef is trying a bite of everyone's meal......seems a bit impossible for a Friday night, downtown Chicago evening. The restaurant was packed and it has A LOT of tables. The crispy brussels sprouts with a curry vinaigrette were also overly salty and we did not get any flavor of a curry vinaigrette. While some parts of the evening were very nice, overall the experience fell flat with the reputation that RPM boasts, they did not live up to that. For people who know what food should taste like, do not give them their money. For the prices people pay, the quality should be consistent, not just focused on the waygu which is what it seemed.
