Everything about this place is fabulous.
Exquisite location. Wonderful food and wine. My second time here first for dinner. Just can't say enough. The best!!

5 mile from the center to the restaurant and were greeted by unfriendly hosts. We were told we must have a reservation. The restaurant was EMPTY!! We were just two and asked if they knew of any other restaurants in the other. The rude host shrugged her shoulders and shook her head. Not one review nor any other information on Yelp says anything about reservations being required. We walked back to town and went where our tour guide took folks. They didn't want to help us either. Our tour guide did share the Tivoli people are very unfriendly. Unfortunately we felt it today.

One of the best restaurants I visited during recent 10 day trip. This restaurant is located at Tivoli near Adriana's Villa Each dish was perfect and even wine recommendation was amazing.

There aren't many reasons to go to Tivoli but this restaurant is THE reason! We spent a wonderful morning touring Hadrian's Villa with Barbara from I Love Tivoli. She selected this place for our lunch. What a great choice! The inside is beautifully and tastefully decorated. The service was exceptional. But the food was the star of the show. We were seated in a corner of the main dining room. We had a view of the ruins and the garden. The server brought us complimentary bread topped with fresh tomatoes and olive oil. Super fresh tomatoes. We shared two hearty appetizers: a lightly fried buratta and a plate of prosciutto. The coating on the fried buratta was so light and crispy. The cheese was mild and a nice contrast to the fresh tomato sauce it rested on. We loved the prosciutto. It was both slightly sweet and salty. The two appetizers were more than enough for the four of us. My sister and I each ordered the ravioli. It was stuffed with cheese and served with a light tomato sauce. The pasta was obviously made in house. It was cooked al dente...perfectly! Our friends each had a pasta dish. I can't remember which they ordered but I do remember that they tasted really good. We all shared and everything was great. We also shared a bottle of white wine from that region of Italy. I think it's the Lazio region. The wine was light and crisp. We had a lemon gelato sorbet for dessert. It was tart and tangy, just like it was supposed to be. They also brought complimentary biscotti...it was made in-house and I wish I could have stuffed some in my purse for the ride back to Rome. The owner, tall, good looking guy, was low key but still friendly. I doubt that I will ever return to Tivoli. If I did this place would be the only reason to return!

Update June 2022 - I had the chance to go to Italy and intentionally spent a night in Tivoli just to have dinner (and bring my kids this time) at Sibilla...the whole family gave it 5 stars so that's a 25 star rating.

Again, our experience of it was undoubtedly enhanced by the careful attentions of our Italian hosts. You have to park a short distance away as there are no vehicles in the town centre. I recommend driving there while it is still light out so that you can marvel at the waterfalls and other remarkable scenery. The Temple of Vesta is on the resto's grounds. It is truly an unreal experience to stroll around the gardens and see the temple, then walk a few feet into a beautiful resto housed in a palace. I would have liked to have eaten in the gardens with their stunning views had it not been so chilly on the night of our visit.And what an experience awaits you inside. The resto is so beautiful, with marble floors, linen tablecloths and vintage photos. The bathrooms are unexpectedly lovely - wait until you see the sinks!I can't list all the items that we ordered, but they were all excellent and beautifully presented. Biggest hits were the calamari and the risotti. Staff extend the most gracious of welcomes from the moment you sweep into the grand entrance. Our only issue with service the whole night came when we, the Canadians, tried to pay the bill. The owner looked like she was going to be ill when we tried to insist. She regained her composure in time to deny our request. Funny how that happened so many times on this trip...Such a beautiful evening will provide us happy memories for years to come.

Beautiful restaurant situated next to the Temple of Vesta, with a gorgeous terrace along the gorge of Parco Villa Gregoriana filled with trees and waterfalls. The ambiance and atmosphere are top notch and it's the perfect place to soak in just being in a gorgeous historical site. The food was delicious, albeit slightly salty. We started with a tasty vegetable minestrone soup and linguini with guanciale, slivered asparagus and pecorino and both were fantastic. I usually avoid asparagus, but the dish was excellent and had great flavor. There were mouthwatering smells wafting off the grill so we ordered the grilled lamb and sausage and were not disappointed! Portions were the perfect size, 2 sausages, 4 lamb chops and were served with sides of sautéed chicory greens and roast potatoes. We didn't have any room for dessert so just finished with decaf Caffe americano which was served with little biscotti.Service was wonderful and attentive.

Fabulous lunch at this restaurant, which is approaching its 300th year. Imagine theLunches and dinners over that span of time. Spelt pappadelli with tomatoes. Linguini with asparagus. Fresh. Perfect. Delicious!

The outdoor terrace overlooks the waterfalls and river and is situated next to an ancient Roman ruin and Villa Gregoriana. The inside of the restaurant is very classy and beautiful. Unfortunately, the kitchen had closed by the time I had arrived in Tivoli on Saturday afternoon. They would not even serve me a cocktail although other guests where still eating. (Afternoon siesta is taken very seriously in all businesses in Tivoli.) I was informed that the restaurant was booked full tonight. I will go back...and I will make a reservation!! Can't wait!! I had one of the very best meals I've had in my life at this gem of a restaurant. The patio has one of the most dramatic views imaginable (next to a Roman temple and a ravine with a waterfall). The service was friendly, attentive and professional. But the food is the real star here! The appetizers were huge, beautifully presented and delicious and the pasta was cooked to perfection and bursting with flavor. I would have stayed all day if I could. If you're in Tivoli on a day trip from Rome, this restaurant is not to be missed.

Visited this neat establishment with a rich 300 year history. When glancing at the menu there were many choices that spoke to me, but I stuck with the ravioli. And let me say, it was possibly the finest meal I have eaten in my entire life, and they look like "tiny hats." After enjoying this small, yet sensational lunch- I had to try the cheesecake. It had a dash of lime to it which was put across the plate that added a little zing- perfect. The view was excellent- it overlooks a nice piece of Tívoli countryside up into the mountain. And of course, you can't miss the wonderful architecture that accompanies this place. It's a little on the pricey side, but once you sip their in-house prosecco- your price worries will fade away. Never have I spent so much on food that was worth every cent. Best you will ever have.

On our first visit we had the Land special (a selection of appetizer, main, and dessert for the day). This was great but meant no sharing amongst the party since whole table must order. Both the Land and Sea appetizers were wonderful to share on our second visit. Clam pasta was excellent.Location is stunning with beautiful outdoor patio next to the Vestal temple. Also, a great way to finish s late afternoon hike at villa gregoriano
