Disappointment
We went to Gravitas for dinner on New Year’s Eve and the experience was disappointing from the minute we walked in the door. The hostess was overwhelmed for no apparent reason, since the restaurant was not particularly crowded. The “waiting area” was a collection leftover furniture in an unheated space. We were told that the long wait for our table was due to other customers not leaving their tables (again, despite there being numerous open tables). We were offered nothing while we waited - no water, no drinks, not a seat at the bar (which was empty). Once we did finally sit down, it took 20 minutes for anyone who worked there to acknowledge us. Our server asked if anyone had talked to us yet. She was fine once the initial awkwardness had passed. Then, it took quite a while to get through our first three courses - the first one took an hour itself - and then the final two felt rushed. We selected the wine pairings, and at least two courses of food were set down before we even had glasses. And then there was the food itself… most of it was unremarkable and some of it was so bad we didn’t touch it. And yet, our dishes were cleared with no questions asked. It was obvious several dishes, including the agnolotti and the halibut, sat under the warming lamp for long enough to continue (over)cooking. The lamb saddle was unidentifiable as lamb, tasting like canned meat. Having been to several Michelin restaurants, I’m baffled as to how Gravitas has a star. I not only would not put it in the same category, I would hands down not recommend it to anyone.

Not sure how this place got 1 Michelin Star. Service was ok, place is a little noisy, but they can't do nothing about it. But the food... Once again a "Chef" that is putting fancy ingredients together simply because creating a dish with humble products require more knowledge and technic... If you are looking to have a gastronomic experience, this is not the right address in DC !

I visited with my wife during restaurant week. I selected the 5 course meal and my wife selected the 3 course from the Restaurant Week menu. The portions were small, one of the smallest portions from all the Michelin star restaurants we visited. The plates are hit or miss. My wife had the heirloom tomato salad and it was perfect. I had Citrus siracha shrimp and it was ok, kind of bland. I had the Yellow fin tuna tartare and I did not like it. I told the server I did not like it and he could not believe it. I ate it but I did not like the flavor. I had linguini and clams after and it was average. My wife ordered the Koji Marinated Salmon and it was tiny, the portion of the salmon was like half what they showed on their Instagram page. I looked it up when I got home and I believe they cut the portion in half, it really looked like an appetizer and it was the main course. I had the slow roasted pork and it was good, not great but the portion was ok. The pork was probably the only plate that was a good size. For dessert my wife ordered the peaches and cream and it was excellent. I ordered the coconut chocolate mousse and it was not good. Neither me or my wife liked the flavor of the mousse. Halfway trough the meal I asked the server for bread. Everyone was getting bread at the beginning of their meal and I got mine because I asked and it was after I was done with the third plate. My wife ordered a drink for $15 dollars and it was literally like just the bottom of the glass. We saw two other people with the same drink and the portion was bigger. The place is small and the tables are really close together. I could hear the whole conversation from the people next to me. Overall, I am disappointed and I would not return. Total bill for restaurant week was $257 dollars plus tip and it was at half the price of their usual menu. I have visited many other Michelin Star restaurants and this one is not close in quality to the others. P.S: My wife ate two slices of pizza when we arrived home and she does not eat a lot.

The food is the centerpiece here, and the service was also excellent. We all five had the tasting menu, and they allowed extensive substitutions and modifications to allow for our various diets and desires. I don't give it a higher rating only because of the ambiance, including the warehouse location and the music. The location is on a back street with many city buses running by. The entrance is not marked-two groups of us independently walked past the entrance toward the sign on the corner by the kitchen. We all enjoyed the various dishes we chose, which came with verbal explanations.

I have heard a lot about this place. Read the reviews. Did some research. This is not like a regular restaurant. It not about chowing down on a quick home style dinner. Everything is engineered to be part of the experience - from the atmosphere, menu, ingredients, and service. The service was stellar, the ingredients and preparation were spot on. Even the tables were placed so we did not disturb others . The background music was a little loud. Now the food. I had the she crab soup. It was the best balanced crab soup I have ever had in a restaurant. I require gluten free so I don’t often eat this out. Nothing was over powering another ingredient, something that is easy to do. My wife had the black bass and I had the lamb. Same thing, every ingredient complimented the next. Everything was delicious and prepared to perfection. The spacing of the courses was far enough apart that we could enjoy our conversations without feeling rushed, something I hate. Even the change of courses seemed to be perfectly synchronized. I have eaten in restaurants around the US and Europe and this has been the best experience I have ever had. My compliments to the chef who put this together and the staff. Can see why this is a Michelin star establishment.

Hands down the worst meal and the worst service I have ever experienced. Overpriced tasting menu. Overpriced wine. We waited a MINIMUM of 30 minutes in between each course. I waited 20 minutes for a cocktail at the start of the meal. And as a finale, everyone in our party had severe food poisoning the same night and the next morning. Stay away from this place. It's a disaster. Worst of all, speaking with the management staff did no good. One manager, who appeared to be high or just totally disinterested, listened with a blank stare on her face and then just walked away without saying anything. And the notion that this is a Michelin Star restaurant is repugnant. Michelin clearly does not care about the stars that they award.

For a $150 tasting menu -- with no ala carte option -- you shouldn't leave hungry. I did as did my wife. 5 courses, each with only a few bites of admittedly choice ingredients that sounded great on the menu and looked nice on the plate. But the portions are quite sparse, and the cocktails at $22 and $23 (although well made) were expensive. I also join other commenters who felt that none of the preparations were outstanding although all were good.
Located as it is in a somewhat distant and edgy part of town, We did not think it's worth the trek or the check.

A little short on the Michelin-Star List
Gravitas has no big splashy sign when you visit, so it is easy to get confused and think maybe you have the wrong place; in fact, we did. With a little garden-like, greenhouse, sea-green entrance and no sign, we thought this was part of Compass Coffee at first.
We set ourselves up for a 3-Course abbreviated dinner and it went something like this:
* Seasonal/Rotating Menu with the highlight of our meal being the complimentary house-made focaccia and butter as well as the Pink Peppercorn Crusted Hamachi Crudo starter - light, freshing, and all the right summer vibes.
*Lots of little touches on each dish (like edible flowers)
* Growing their own garden on their rooftop
* Impeccable and attentive service
* Easy reservations
We've been to our fair share of Michelin-Star and fine-dining restaurants. As hubs mentioned, dinner was more like: jack of all trades, master of none. We like Gravitas for what it is, but there was no "star dish" that we fell in love with because each dish kind of had too much going on unfortunately.
Great experience
Restaurants with only tasting menus are usually either great, or really bad, because a limited menu can leave you with little option is you aren't keen on their style or choices. Gravitas is the exceptional great restaurant. They take great care to make sure the flavors are extremely well balanced and something you will remember. My wife and I tried the braised beef cheeks and the escolar and were impressed from the first bite on. Waitstaff was helpful and knowledgeable. Enjoyable experience.

I booked Gravitas initially for a party of three to celebrate my daughters eigteenth birthday. Expanding the booking to five people just six days before was no problem. The restaurant staff was very responsive to my email request making arrangements within the hour of receving my note. My reservation was for outside on their roof top patio. We arrived layered and equiped wiht a blanket or two as it turned out to be a very windy evening at 52F. Needlessly. Thankfully the staff of Gravitas were mindful of the chill factor and had moved us to what I susoect in non pandemic times is the foyer The windows were wide open, they had a small heater for each table and, yes, blankets! Something I have in the past experienced only in Turkey. We were made to feel very welcomed and taken good care of by the knowledgable and mindful staff throughout the seven course chef's tasting menue which we thouroughly enjoyed. We are very much tasters so there was some food sharing going on which was not frowned upon. All dishes were very tasty and served with a lot f appeal to the eye. Added to the seven course was a small greeting from the kitchen plus hot homemade breads. The adults opted for the wine pairing and the somelier (as well as our head waiter) explained all wines origin and flavor (and te different dishes). Topping it of was a small cake with a candle for the birthday adult. All in all a wonderful experience fully meeting my expectation of Michelin star dining. Our reservation was for 6pm, which initally I thought to be on the early side. No regrts though as the meal took roughly four hours., so do book the early slot if you can. I would absolutely go again.
Given this was our first venture to a restaurant after 388 days of #stayhome we were a littel concerned, but saftey and cleanliness protocolls were followed to the T. The bussing staff did ask us (none of the other tables though) to put on masks while clearing between courses. We felt very safe.
Nice tasting menu
Nice tasting menu and wine pairing. Service was informative and good. The oyster dish was the only one not to my liking — too innovative — the oyster itself was lost and barely noticeable when tasting. The bread was also a bit hard, maybe sat out too long. The sashimi, squab, and milk and honey dessert were all delicious! I will certainly return.

Excellent tasting menu, inventive cocktails (with wonderful house made juices and bitters), and knowledgeable and friendly service. Outdoor Covid dining was comfortable with ample space and house-provided blankets. Outstanding dishes were yellow tail sashimi, lobster agnolotti, duck breast, and a crunchy sticky toffee pudding. Interesting cocktails featured juices like beet, purple cabbage, and carrot, which never overwhelmed the base spirits or other mixers. Michelin star fully deserved!
