Pretty cool decor. Hip, upscale without being too ostentatious. Quite suitable for a fusion restaurant. Decided to start with Soul Cooler. I wouldn’t use Hibiki in a cocktail, which is why I wanted to try this cocktail to see how they did it. It’s essentially a fancy whiskey sour with beetroot juice and orgeat syrup. It certainly looks good, and the sediments from beetroot juice gave the cocktail a cloudy appearance, even dreamy. A lot of Hibiki’s flavour is hidden underneath the syrup and beetroot juice. You really need to take your time to identify the very faint aromas of white chocolate and honey. I can’t say that I loved it, but regardless this is a really good cocktail. It would be perfect if they could adjust the recipe a little bit to allow Hibiki to pronounce its complex flavours. Went with the lunch Omakase menu. The food runner was scrambling a bit when he came to the table and the waiter was not there. Which was a little bit odd and very obvious. I guess their SOP would be the waiter putting the food on the table and explaining the dish, but the runner’s hesitation was very unnatural. Which is a bit of a shame but nothing too serious. Miso soup was excellent. I never really enjoyed traditional Japanese miso soup that much. It’s always a bit plain and thin for me. The miso soup here had a much richer texture and some extra ingredients. Almost a very light cream soup. I liked it a lot. Chūtoro hosomaki was not made with seaweed, which really surprised me a bit. I think they used a soy wrap instead? Anyway the chūtoro’s quality was really good. The Kobe edamame was bizzare. It felt like they took fusion cuisine and pushed it a bit too far. I understand that edamame as an appetiser is often lacking in creativity: almost everywhere you go you’d get edamame with togarashi and sea salt. They decided to sear the edamame with wagyu fat, and essentially season the edamame pods so that you’ll get a lot of savoury taste from sucking on the pods. The first few edamame pods were ok: delicious grease with soft beans. After going through half of the edamame, it became a struggle. It started to get too salty and too greasy. I guess even for lunch menu for 1, the edamame was over-portioned and for sure for a la carte it should be shared between at least 2 people. Tiger prawn tempura came to the table when I still had the empty hosomaki plate and edamame bowls on the table. Which was a little bit out-of-the-norm. Even for a lunch menu with many appetisers, it would be best to clear empty plates before serving new plates. The tempura could wait for 1 more minute without getting cold. As far as the taste is concerned, it was great. Sauce was not too rich, and the lettuce was dressed with a light citrus dressing to balance the taste of prawns. Even a little bit of frisée to give a kick of bitterness. Nigiri platter came when I had 2 empty plates (prawn tempura and hosomaki) and 2 empty edamame bowls on the table. A different food runner put the platter down, and he was having some difficulties explaining the 4 types of nigiri. Not that he didn’t know what he was serving, but he probably didn’t explain the dish enough times to be confident while doing it. Again, nothing too serious. But the empty plates felt somewhat sloppy by this point. Miso black cod was great. The fish itself was cooked beautifully and there was not an excess of sauce: efficient and clean. Plain edamame on the side was… weird? Onigiri was a nice touch, although a little bit bland. Honestly I think maybe using sushi rice for the onigiri would be a better choice? Give the dish a bit of acidity next to the sweet cod. Decided to get another cocktail, Kanbara. This one was really, really good. Chita whiskey and Bride of the Fox sake, with some other ingredients if I’m not wrong. Served in a flask with a small glass on the side, cold sake style. Love that idea and it looked beautiful. Taste was amazing: fresh, fruity, acidic. Nothing too fancy and complicated. Extremely enjoyable cocktail. 9 out of 10, very close to Dubai Mall, definitely worth visiting.
